Orange Lettuce Salad

8 cups torn Bibb lettuce or salad greens of choice
3 green onions, sliced
1 can (15 ozs) mandarin oranges, drained
1/4 cup vegetable oil
2 Tbs vinegar
2 Tbs sugar
2 Tbs minced fresh parsley
1/2 tsp salt, optional
Dash pepper
4 drops hot pepper sauce
1/4 cup slivered almonds, toasted, optional

In a salad bowl, toss lettuce, onions and oranges; set aside. In a jar with a tight-fitting lid, combine oil, vinegar, sugar, parsley, salt if desired, pepper and hot pepper sauce; shake well. Drizzle desired amount over salad; toss to coat. Sprinkle with almonds if desired. Refrigerate any remaining dressing. Yield: 8 servings.
BBQ Beef Patties

1 egg
1/2 cup BBQ Sauce, divided
3/4 cup crushed cornflakes
1/2 to 1 tsp salt
1 lb ground beef

In a bowl, combine egg, 1/4 cup bbq sauce, cornflake crumbs and salt. Add beef and mix well. Shape into four patties, about 3/4 inch thick. Place on the grill or in a baking pan. If cooked in oven, add remaining BBQ sauce. Bake, uncovered, at 375 deg for 25-30 minutes or until meat is no longer pink. If placing on the grill, add the BBQ sauce when done cooking.
Deli Club Sandwich

1/2 cup mayonnaise
1-2 Tbs chili sauce
1 Tbs sweet pickle relish
9 slices bread, toasted
3 thin slices deli ham
3 slices Swiss cheese
3 thin slices deli turkey
6 thin slices tomato
3 lettuce leaves

In a bowl, combine mayonnaise, chili sauce and pickle relish. Spread 1 Tbs on each slice of bread. Top three slices of bread with a slice of ham and swiss cheese. Top each with another slice of bread. Layer with turkey, tomato and lettuce. Top with remaining bread. Secure with toothpicks if necessary. Cut into quarters. Yield: 3-6 servings.
