1 medium uncooked potato, peeled and grated
1 medium carrots, grated

12 slices whole wheat bread, toasted
Sliced red onion and lettuce leaves, optional

In a bowl, combine the first six ingredients; mix well. Pour about 1/2 cup batter onto a hot griddle lightly coated with nonstick cooking spray. Fry for 2-3 minutes on each side or until golden brown. Serve on toasted bread with onion and lettuce if desired. Yield: 6 burgers.
Honey Barbecued Ribs

3 lbs country style pork ribs
1/2 tsp garlic salt
1/2 tsp pepper
1 cup ketchup
1/2 cup packed brown sugar
1/2 cup honey
1/4 cup spicy brown mustard
2 Tbs Worcestershire sauce
1-1/2 tsp liquid smoke, optional

Place ribs in a large kettle or Dutch oven; sprinkle with garlic salt and pepper. Add enough water to cover; bring to a boil. Reduce heat; cover and simmer for 1 hour or until juices run clear and ribs are tender; drain. Meanwhile, combine the remaining ingredients. Grill ribs, uncovered, over medium heat for 10-12 minutes, basting with sauce and turning occasionally. Yield: 4 servings.
